Chicken Avocado Burgers

1 1/2 lb ground chicken (or ground turkey)
1 cup crumbled feta cheese
3 teaspoons fresh oregano, finely chopped
1/2 cup sliced green onions
1 large zucchini, grated and patted dry on paper towels
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
3/4 cup dry bread crumbs
2 large egg whites
1 tablespoon canola oil
8 Bakery Kaiser rolls
1 small red onion, thinly sliced
1 medium tomato, thinly sliced
1 Hass avocado, sliced

  1. Combine in a large bowl: chicken, feta, oregano, green onions, zucchini, salt, pepper, bread crumbs, and egg whites; mix everything until just combined. Shape mixture into 8 burgers; chill 30 minutes.
  2. Preheat large, nonstick sauté pan on medium 2-3 minutes. Place oil in pan; add 4 burgers and cook 5-6 minutes on each side or until 165°F. Repeat with remaining burgers.
  3. Place burgers on buns; top with red onions, tomatoes, and avocado. Serve.
