Crab Cakes With Sauce, Wild Mushroom Couscous and Fresh Broccoli

Cooking Sequence

  • Prepare crab cakes and begin to fry - 10 minutes
  • Prepare broccoli and couscous - 5 minutes
  • Complete crab cakes and serve - 10 minutes

Crab Cakes With Sauce, Cavalier Couscous and Fresh Broccoli

Crab Cakes With Sauce

2 tablespoons fat-free sour cream
1/4 cup light mayonnaise
1/4 cup cocktail sauce
2 teaspoons horseradish
1/2 cup Italian bread crumbs
2 tablespoons butter (divided)
1 pound crab cake mixture (4 patties)


1. Preheat large sauté pan on medium heat 5 minutes. Combine in small bowl, sour cream, mayonnaise, cocktail sauce and horseradish; set aside. Place bread crumbs on plate (may be paper).
2. Place 1 tablespoon butter in pan and swirl to coat. Gently coat both sides of crab cakes in bread crumbs and then add to pan. Wash hands.
3. Cook 6 minutes then add remaining butter. Turn each crab cake and cook 6 more minutes. Serve crab cakes with sauce.

Wild Mushroom Couscous

1 tablespoon butter
1 (10 1/2-ounce) can condensed French onion soup
1 (5 3/8-ounce) box wild mushroom and herb couscous
1 (4-ounce) package gourmet mushroom blend


1. Combine in medium saucepan, butter, soup, seasoning packet (from couscous) and (rinsed) mushrooms. Cover and bring to boil on medium-high heat.
2. Stir in couscous. Remove from heat, cover and let stand 5 minutes. Serve.

Fresh Broccoli

1 (12-ounce) bag fresh broccoli florets
1/3 cup water
1 tablespoon butter
1/2 teaspoon lemon juice
1/2 teaspoon seasoned salt


1. Place broccoli and water in microwave-safe bowl; cover and microwave on HIGH 4 minutes.
2. Drain; stir in remaining ingredients. Serve.
