Strip loin roast is a good alternative to a traditional rib roast for your holiday meal centerpiece. The cut is lean, tender, and flavorful. Always let the roast stand after cooking, allowing juices to reabsorb before slicing. Slice thinly across the grain for tenderness.

Roasted Dijon-Pepper Strip Roast

Ingredients
2 lb strip loin roast
2 tablespoons cracked peppercorns (or coarse ground black pepper)
2 teaspoons kosher salt
1/2 cup Dijon mustard

Steps
  1. Preheat oven to 475F. Place beef in shallow roasting pan (fat side up); season with pepper and salt. Cook roast for 10 minutes. Reduce heat to 350F; cook roast 35 more minutes.
  2. Remove roast from oven; spread mustard over top of roast. Cook roast 10-15 more minutes or until 145F (for medium rare). Use a meat thermometer to accurately ensure doneness. (Roast weights vary; adjust cook time as needed.)
  3. Transfer roast to cutting board; let stand 10-15 minutes before slicing thinly across the grain.
