Oven-Fried Chicken Wings

Chicken wings are not just for tailgating. Whether you bake, broil, grill, or fry them, wings can be sauced and seasoned many ways, from barbecue and buffalo to Creole or teriyaki. Plan to prepare one-half to two-thirds of a pound of wings per person.

Oven-Fried Chicken Wings

1 stick unsalted butter
1 cup biscuit baking mix
2 teaspoons paprika
1 1/2 teaspoons seasoned salt
4 lb chicken wings or drummetes (thawed, if frozen)

  1. Preheat oven to 400F. Line two 1-inch-deep baking sheets with foil; melt 1/2 stick butter on each pan in oven.
  2. Combine baking mix, paprika, and seasoned salt; dredge chicken in mixture, then place on pans in single layer 1/2-inch apart. Bake 3035 minutes, turning once halfway through, or until chicken is 165F and crispy. Serve.

Other Preparation Methods

Broil: Preheat broiler. Line large baking sheet with foil. Coat 4 lb chicken wings with 3 tablespoons each oil and Creole seasoning; place tightly packed in pan. Place tray on middle rack; broil 7-8 minutes on each side or until 165F. Serve with any dipping sauce.

Grill: Preheat grill on medium. Grill 4 lb chicken wings 11-13 minutes on each side or until 165F. Combine 1 cup barbecue sauce and 1/2 cup buffalo wing sauce; toss chicken with sauce. Serve.
