Creamy Onion Pork With Beans and Pico de Gallo

Creamy Onion Pork

Ingredients
1 large sweet onion, sliced
1 large green bell pepper, sliced
1 boneless Boston butt pork roast (2–3 lb)
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 tablespoon olive oil
1 (10.75-oz) can condensed cream of onion soup
1 cup white wine (or chicken broth)
2 tablespoons chicken herb seasoning
1/4 cup fresh mint leaves, finely chopped

Prep
  • Slice onion and bell pepper.
Steps
  1. Preheat large sauté pan on medium-high 2–3 minutes. Season pork with salt and pepper (wash hands). Place oil in pan, then add pork; cook 3–4 minutes on each side or until well browned. Transfer to slow cooker.
  2. Whisk soup, wine, and seasoning until blended; stir in onions and peppers. Pour mixture over pork.
  3. Slow cook on HIGH 3–3 1/2 hours or until pork is fall-apart tender. Chop mint; stir into pork. Serve.

Beans and Pico de Gallo

Ingredients
1 small jalapeño pepper, finely chopped
1/4 cup fresh cilantro, coarsely chopped
2 cans pink beans (15–16 oz), rinsed and drained
1 1/2 cups fresh salsa (pico de gallo)
1/2 teaspoon kosher salt
1/4 teaspoon ground cumin
juice of 1 lime

Prep
  • Chop jalapeño (remove seeds, optional) and cilantro.
Steps
  1. Combine all ingredients (except lime juice) until blended.
  2. Squeeze juice of lime (1 tablespoon) over bean mixture. Stir and serve.
