Lemon Velvet Chicken With Mock Mashed Potatoes

Lemon Velvet Chicken

Ingredients

1 tablespoon flour
1 teaspoon seasoned salt
large zip-top bag
1 1/2 pounds boneless chicken tenders
2 tablespoons butter
1 tablespoon capers
1 lemon (for juice, rinsed)
1 cup Alfredo sauce



Steps

1. Preheat large sauté pan on medium-high 2–3 minutes. Place flour and seasoned salt in zip-top bag. Add chicken; seal tightly and shake to coat. Wash hands.
2. Place butter in pan; swirl to coat. Place chicken in pan using tongs. Cook 4–5 minutes, turning occasionally, or until chicken begins to brown.
3. Stir in capers. Cut lemon in half and squeeze juice (about 2 tablespoons) over chicken. Stir in Alfredo sauce and reduce heat to medium-low; simmer 6–8 minutes or until thoroughly heated. Serve.

Mock Mashed Potatoes

Ingredients
1 (16-ounce) bag frozen cauliflower
1/2 cup shredded Colby/Monterey Jack cheese blend
1/4 cup sour cream
2 tablespoons butter
1/4 teaspoon pepper
1/2 teaspoon seasoned salt

Steps

1. Place cauliflower in microwave-safe bowl. Cover and microwave on HIGH 8 minutes, or until cauliflower begins to soften.
2. Stir in remaining ingredients and microwave 3–4 more minutes or until tender.
3. Process in food processor 30 seconds or until smooth. Serve.
