Hawaiian Style Chicken Over Rice

Ingredients
1 1/2 lbs boneless, skinless chicken breasts
1/2 teaspoon seasoned salt
2 tablespoons canola oil
1/4 cup frozen diced green peppers
1/4 cup frozen diced onions
2 cups instant rice
1 1/2 cups water
1 (20-ounce) can diced pineapple (drained)
1 (18-ounce) jar sweet and sour sauce

Steps
1. Preheat large sauté pan on medium-high 2–3 minutes. Cut chicken into bite-size chunks and sprinkle with seasoned salt (wash hands).
2. Place oil in pan; swirl to coat. Add chicken, green peppers, and onions (wash hands); cook 6–8 minutes, stirring often, or until internal temperature of chicken reaches 165°F. Use a meat thermometer to accurately ensure doneness. (Thread 2 or 3 chunks of chicken on thermometer to make sure the dimpled "sensor" area is covered.)
3. Meanwhile, place rice and water in microwave-safe bowl. Cover and microwave on HIGH 5–7 minutes or until rice is tender and most of water is absorbed.
6. Reduce heat on chicken to low; stir in remaining ingredients. Cook 2–3 more minutes, stirring occasionally, or until sauce is thoroughly heated. Serve over rice.

Sugar Snap Peas

Ingredients
1 lb fresh sugar snap peas (rinsed)
2 tablespoons unsalted butter
1/2 teaspoon seasoned salt
1 teaspoon sugar

Steps
1. Snip or pinch ends of peas, if needed.
2. Preheat large sauté pan on medium-high 2–3 minutes.
3. Place butter in pan; swirl to coat. Add remaining ingredients; cook 4 minutes, stirring frequently, or until peas begin to soften.
4. Cover and cook 3 more minutes or until tender. Serve.
