Herb-Marinated Feta and Arugula Salad

Herb-Marinated Feta and Arugula Salad

2 teaspoons white balsamic vinegar
1 teaspoon dried Italian seasoning
1/4 cup extra-virgin olive oil
8 oz chunk feta cheese
5 oz arugula or frisée salad greens (4 cups)
1/3 cup pitted kalamata olives
1 tablespoon fresh lemon juice

  1. Preheat broiler. Combine vinegar and Italian seasoning; add oil slowly, whisking until blended. Cut cheese into four equal pieces; add to oil mixture, turning to coat. Broil 2–3 minutes or until golden and bubbly.
  2. Toss salad greens with remaining oil and vinegar mixture; divide greens between four serving plates. Add cheese to each salad. Cut or tear olives in half; sprinkle over salads. Sprinkle each salad with lemon juice and serve.
