Baked Sloppy Joe
Ingredients
1 pound lean ground beef, 7% fat
1 1/2 cups biscuit baking mix
3/4 cup reduced-fat milk
1 egg (or 1/4 cup egg substitute)
1 1/2 cups pasta sauce
1/4 cup barbecue sauce
1/2 cup shredded Cheddar cheese
Steps
1. Preheat oven to 425°F. Preheat large sauté pan on medium-high 1–2 minutes. Brown ground beef 5–7 minutes until meat is brown and no pink remains. Stir frequently and break meat up as it cooks.
2. Meanwhile, combine biscuit mix, milk, and egg in medium bowl; set aside
3. Drain ground beef and return to pan. Stir in pasta sauce and barbecue sauce; heat, stirring occasionally, until boiling. Pour mixture into 2-quart baking dish and sprinkle with cheese.
4. Spoon batter over meat mixture (spreading to cover evenly). Bake 25 minutes or until golden. Serve.

Banana Split Salad
Ingredients
1 pint fresh strawberries (rinsed)
1 teaspoon sugar
2 bananas (rinsed)
8 ounces low-fat cottage cheese
1 1/2 tablespoons light salad dressing-type mayonnaise
4 lettuce leaves (rinsed)
2 tablespoons sliced almonds
Steps
1. Remove stems from strawberries. Cut into bite-size pieces and place in medium bowl. Sprinkle with sugar and set aside.
2. Quarter bananas lengthwise; then cut lengths in half and peel. Place 4 banana quarters in second medium bowl and mash with fork until smooth. Stir in cottage cheese and salad dressing.
3. Line each serving bowl with lettuce. Top with one "scoop" of cottage cheese mixture, using ice cream scoop to form mixture. Arrange 3 banana quarters around each scoop. Sprinkle with strawberries and top with almonds. Serve.
