Dublin Chicken, Potato Patties and Fresh Spinach

Total Time - 45 minutes / Makes 4 Servings

Cooking Sequence

  • Prepare potato patties through step 4 and set aside - 15 minutes
  • Prepare chicken and begin to bake - 15 minutes
  • Continue potato patties, prepare spinach; serve - 15 minutes

    Dublin Chicken

    Ingredients
    cooking spray
    1/2 cup roasted red peppers
    1/4 cup fresh parsley
    1 (8-ounce) package Irish cheese
    1/2 cup refrigerated egg substitute
    1/2 cup Italian bread crumbs
    1/2 teaspoon salt
    1 teaspoon Italian seasoning
    1 1/2 pounds boneless, skinless chicken cutlets


    Steps
    1. Preheat oven to 400°F. Spray baking sheet with cooking spray.
    2. Cut peppers into 1/4-inch strips; set aside. Wash and chop parsley; set aside. Finely grate half of cheese (4 ounces) using food processor or hand grater. Thinly slice remaining cheese and set aside.
    3. Place egg substitute into medium mixing bowl.
    4. In second medium mixing bowl, mix together bread crumbs, parsley, salt, grated cheese and Italian seasoning.
    5. Dip chicken into eggs, coating both sides, press chicken into bread crumb mixture, and pat to coat. Turn and pat other side. Repeat with remaining chicken. Place chicken on baking sheet. Wash hands.
    6. Divide peppers evenly, and place on top of chicken.
    7. Divide cheese slices and place on top of peppers.
    8. Bake for 15-18 minutes. Serve over bed of fresh spinach.

    Potato Patties

    Ingredients
    1 (8-ounce) package Irish cheese
    1 (20-ounce) package refrigerated mashed potatoes
    2 tablespoons frozen chopped chives
    salt and pepper, to taste
    1/2 cup refrigerated egg substitute
    1/2 cup potato flakes
    1/4 cup flour
    2 tablespoons butter
    2 tablespoons olive oil
    paper towels


    Steps
    1. Grate cheese using food processor or hand grater.
    2. Mix potatoes and cheese together in medium mixing bowl. Stir in chives, salt and pepper.
    3. Add egg substitute and potato flakes; blend well.
    4. Place mixture onto lightly floured surface. Divide into eight cakes about 3/4-inch thick (use approximately 1/2 cup mixture for each cake).
    5. Preheat large sauté pan on high for 1-2 minutes.
    6. Add butter and oil to pan; swirl to coat.
    7. Place cakes in sauté pan. Cook 4 minutes, or until golden brown. Turn cakes and cook additional 4-5 minutes, to brown second side. Place on paper towel-lined plate to drain. Serve.

    Fresh Spinach

    Ingredients
    1 (10-ounce) bag spinach
    1 tablespoon butter
    salt and pepper, to taste


    Steps
    1. Place spinach in microwave-safe bowl.
    2. Cover and microwave on high for 2-3 minutes. Drain water from spinach, if necessary.
    3. Add butter, salt and pepper. Stir to melt butter. Serve.
