Smoked Salmon Chowder With Sun-Dried Tomato Bread

Smoked Salmon Chowder

Ingredients
2 cups refrigerated diced potatoes with onions
1 (10-ounce) bag frozen seasoning blend (contains diced onions, green/red peppers, celery and parsley)
2 slices bacon
1 teaspoon minced garlic
1 (4 1/2-ounce) package peppered smoked salmon
1 tablespoon flour
1 (14-ounce) can reduced sodium-chicken broth
1 (8 1/2-ounce) can whole kernel corn
1 (8-ounce) can tomato sauce
1 cup heavy whipping cream

Steps

1. Combine potatoes and seasoning blend in microwave-safe bowl; microwave on HIGH 6 minutes, stirring once, until heated.
2. Preheat large saucepan on medium-high 2–3 minutes. Slice bacon into bite-size pieces; place with garlic in pan and cook 2 minutes, stirring occasionally. Wash hands.
3. Stir potato mixture into bacon. Cover and cook 4 minutes, stirring occasionally.
4. Remove skin from salmon by gently pulling meat away from skin. Dice into 1/4-inch cubes and add to potatoes. Wash hands.
5. Stir in flour and cook 2 minutes, stirring often. Stir in broth and corn; cook 2 more minutes.
6. Stir in remaining ingredients. Cover and reduce heat to medium; simmer 5–7 minutes until potatoes are tender, stirring occasionally. Serve.

Sun-Dried Tomato Bread

Ingredients
garlic cooking spray
1 (11-ounce) can refrigerated French bread dough
2 tablespoons sun-dried tomato spread
1 tablespoon shredded three-cheese blend

Steps

1. Preheat oven to 350°F. Spray baking sheet with cooking spray. Unroll dough. Coat dough with tomato spread up to 1 inch from edge.
2. Sprinkle with 2 teaspoons cheese; roll lengthwise. Place, seam side down, on baking sheet; sprinkle with remaining cheese.
3. Bake 18–20 minutes until golden brown. Serve.
