Spiced Shrimp With Garlic Bread Sticks, Key West Cocktail Sauce and Quick Potato Salad

Cooking Sequence

  • Preheat oven; prepare potato salad and place in refrigerator - 10 minutes
  • Prepare cocktail sauce and refrigerate - 5 minutes
  • Prepare shrimp and serve - 15 minutes

    Spiced Shrimp With Garlic Bread Sticks

    Ingredients
    1/4 cup cream sherry
    1/2 teaspoon hot sauce
    1 cup hot tap water
    2 teaspoons Old Bay seasoning
    1 teaspoon lemon juice
    3 tablespoons pickling spice
    1 teaspoon celery salt
    4 garlic bread sticks
    1 1/2 pounds raw E-Z peel tiger shrimp
    6 cups ice


    Steps
    1. Preheat oven to 375F.
    2. Place in saucepan: sherry, hot sauce, water, Old Bay, lemon juice, pickling spice, and celery salt. Stir; cover, bring to boil on high heat.
    3. Place bread on baking sheet; bake for 7 minutes.
    4. Rinse shrimp in cold water and add to boiling spices. Cover and cook for 3 minutes; stirring occasionally.
    5. Drain shrimp in colander and cover with ice. Run cold water over ice and shrimp to chill. Remove ice and serve.

    Key West Cocktail Sauce

    Ingredients
    3/4 cup chili sauce
    2 teaspoons Worcestershire sauce
    1 teaspoon lemon juice
    1 teaspoon hot sauce
    2 tablespoons horseradish


    Steps
    1. Place in mixing bowl: chili sauce, Worcestershire, lemon juice, hot sauce and horseradish.
    2. Stir together and serve.

    Quick Potato Salad

    Ingredients
    one 20-ounce bag diced potatoes w/Onion
    2 tablespoons hot tap water
    2 tablespoons green onion (optional)
    one 8-ounce container Deli egg salad
    1 teaspoon dijon mustard
    1/4 cup light mayonnaise
    1/4 teaspoon seasoned salt
    salt and pepper, to taste


    Steps
    1. Place potatoes and water in a microwave-safe bowl; cover and microwave on high for 8 minutes.
    2. Wash and dice green onion into 1/4-inch pieces, including up to 1/2 of green section (if using). Place in mixing bowl.
    3. Add egg salad, mustard, mayonnaise, salt or seasoned salt and pepper to taste.
    4. Add potatoes to mixture; mix well and refrigerate for 20 minutes. Serve.
