Pineapple-Pine Nut Turkey Salad
Ingredients
10–12 oz smoked turkey (or chicken), cut into bite-size pieces 1/4 cup pine nuts
1/2 cup trinity mix (fresh pre-diced onions, bell peppers, celery)
1 head Boston Bibb lettuce (5–6 oz), core removed
1 (8-oz) can pineapple tidbits (drained)
1/4 teaspoon herb-seasoned salt
1/3 cup light mayonnaise
1/8 teaspoon pepper
Prep
- Remove core from lettuce; cut up meat.
Steps
- Combine all ingredients (except lettuce).
- Arrange lettuce leaves on salad plates (or serving platter); mound salad mixture on top and serve.
