Seafood in Pastry

Ingredients
1 (10-ounce) package frozen puff pastry shells
4–5 sprigs fresh parsley
1–2 green onions
1 lemon
4 ounces pre-sliced baby portabella mushrooms
1 tablespoon garlic butter
3/4 pound peeled/deveined shrimp (thawed, if needed)
3/4 pound bay scallops (thawed, if needed)
1 tablespoon basil pesto
1 tablespoon flour
1/2 cup Alfredo sauce

Steps

1. Preheat oven to 400°F. Place pastry shells (top side up) on baking sheet. Bake shells 20–25 minutes or until golden and puffed.
2. Meanwhile, rinse parsley, onions, lemon, and mushrooms. Chop parsley finely (2 tablespoons); chop green onions finely. Cut lemon in half; set all aside.
3. Preheat large sauté pan on medium-high 2–3 minutes. Place butter in pan; swirl to coat. Add mushrooms, shrimp, scallops, and pesto. Cook 4–5 minutes, stirring occasionally, or until mushrooms are tender and both shrimp and scallops are opaque.
4. Stir in flour, Alfredo sauce, juice of one-half lemon (1 tablespoon), parsley, and onions. Simmer 1–2 minutes, stirring occasionally, or until slightly thickened.
5. Place pastry shells on serving plates. Remove tops, using a fork, and hollow out center of shells; discard the extra pastry. Fill shells with seafood mixture and serve. (Makes 6 servings.)

Peas

Ingredients
1 (16-ounce) bag frozen peas
1 tablespoon garlic butter
1/2 teaspoon seasoned salt

Steps

1. Place peas in microwave-safe bowl. Cover and microwave on HIGH 6–8 minutes, stirring once, or until peas are tender.
2. Drain peas. Add butter and seasoned salt; stir and serve.
