Smoked Pork Chops With Home Fries

Ingredients
2 tablespoons canola oil, divided
1 (20-ounce) package sliced home fries
seasoned salt, to taste
4 smoked pork chops (about 1 pound)

Steps

1. Preheat large sauté pan on medium-high 2–3 minutes. Place 1 tablespoon oil in pan and swirl to coat. Add potatoes, sprinkle with seasoned salt and fry 5–7 minutes until potatoes begin to brown.
2. Flip potatoes and continue to fry 4–5 more minutes until golden brown.
3. Meanwhile, preheat second sauté pan on medium-high 2–3 minutes. Add remaining 1 tablespoon oil and pork chops. Cook 3 minutes on each side.
4. When potatoes are ready, remove from heat until ready to serve.

Green Beans With Tomatoes and Bacon

Ingredients
6 slices bacon
1/4 cup pre-diced onions
1 (14 1/2-ounce) can stewed tomatoes (undrained)
2 (14 1/2-ounce) cans green beans (drain 1 can)

Steps

1. Preheat medium saucepan on high 2–3 minutes. Dice bacon into 1/2-inch pieces.
2. Place onions and bacon in pan and cook, stirring occasionally, 6 minutes.
3. Add tomatoes and beans. Cook, stirring occasionally, 10 minutes. (Makes 6 servings.)
