  • Prepare sandwiches and begin to grill; complete salad and serve - 15 minutes

Mexican Grilled Cheese Sandwiches

Ingredients
1 cup roasted red peppers
4 teaspoons mayonnaise
8 slices buttercrust white bread
1/4 cup shredded Mexican-blend cheese
1/4 cup pepper cheese spread
butter cooking spray

Steps

1. Preheat 2-sided tabletop grill. Drain peppers and pat dry.
2. Spread mayonnaise on four bread slices. Sprinkle with shredded cheese; top each slice with red peppers. Spread pepper cheese spread on remaining bread slices; assemble sandwiches.
3. Coat top and bottom of grill with cooking spray. Grill sandwiches 3–4 minutes or until golden. Serve.

Southwestern Salad

Ingredients
3 plum tomatoes
1 cucumber
8 ounces classic salad blend (iceberg lettuce, carrots, red cabbage)
1 cup corn chips
1 (2.25-ounce) can sliced black olives (drained)
1/4 cup shredded Mexican-blend cheese
1/2 cup matchstick carrots
1/4 cup fresh mild salsa
1/4 cup Italian salad dressing
2 tablespoons Heinz 57 steak sauce

Steps

1. Cut ends off (rinsed) tomatoes and quarter lengthwise. Slice (rinsed) cucumber in half (reserve one half for another use) then cut into bite-size pieces. Place both in salad bowl with salad blend.
2. Crush corn chips into salad; add olives, cheese, and carrots. Whisk remaining ingredients together in small bowl. Chill until ready to serve.
3. Pour dressing over salad; toss to coat and serve.
