  • Prepare vegetables through step 3 - 10 minutes
  • Open and drain tuna; combine with all ingredients and serve - 5 minutes

Salad Niçoise

Ingredients
1 (10-ounce) bag European salad blend
1 seedless cucumber (rinsed)
2–3 green onions (rinsed)
1 (12-ounce) can white albacore tuna in water (drained)
1/4 cup sweet gherkins
2 tablespoons sliced black olives
1/2 cup grape tomatoes (rinsed)
1/4 cup matchstick carrots
1/2 cup canned quartered artichoke hearts
1/4 cup balsamic vinaigrette 

Steps

1. Place salad blend in salad bowl. Cut one-fourth of cucumber into 1/8-inch slices. Place on top of salad. Chop green onions finely and sprinkle over salad.
2. Flake tuna, using fork, and add to center of salad. Slice gherkins and sprinkle over salad.
3. Top with olives, tomatoes, carrots, and artichokes. Serve with salad dressing.
