Cobb Salad

Cobb Salad

Ingredients
2 eggs
1 (10-ounce) bag European salad blend
1 avocado
1/4 cup green onions (3-4 onions)
1 seedless cucumber
1/4 cup matchstick carrots
1/4 cup cooked diced ham
1/2 cup Cheddar and Monterey Jack cheese cubes
2 tablespoons crumbled blue cheese
1 tablespoon cooked, crumbled bacon
1/2 cup grape tomatoes
1/4 cup refrigerated Italian dressing 

Steps

1. Place eggs in medium saucepan and cover with water. Cover and bring to boil on high.
2. Cut avocado into quarters; remove peel. Cut into bite-size pieces. Chop green onions finely. Cut one-fourth of cucumber into 1/8-inch slices. Set all aside.
3. Remove cover when eggs boil; boil 8 more minutes.
4. Place salad blend in salad bowl(s). Build salad by laying each ingredient in parallel rows across top of lettuce: carrots, ham, cheese cubes, blue cheese, bacon, tomatoes, avocado, onions, and cucumber.
5. Quickly cool eggs by placing in ice cubes and water for 2 minutes. Peel eggs and slice into wedges; add to salad. Top with dressing and serve.
