Chicken Caesar Salad With Garlic Croutons

Chicken Caesar Salad

Ingredients
10 ounces European salad blend
1 (10-ounce) package refrigerated cooked Italian chicken
2 tablespoons shredded Parmesan cheese
1/4 cup Caesar salad dressing
1/8 teaspoon pepper

Steps
1. Place salad blend in salad bowl from crouton recipe.
2. Tear chicken into bite-size pieces and add to bowl.
3. Add remaining ingredients. Toss with Garlic Croutons and serve.

Garlic Croutons

Ingredients
6–8 sprigs fresh Italian parsley
6 cloves fresh garlic
2 tablespoons extra-virgin olive oil
1/2 teaspoon salt
1/8 teaspoon pepper
1 Bakery hoagie roll

Steps

1. Place oven rack six inches from broiler, then preheat on broil. Remove any tough stems from (rinsed) parsley; chop finely using food chopper (or knife and cutting board) and place in salad bowl. Crush garlic, using garlic press, into bowl. Use knife to scrape garlic from bottom of garlic press. Stir in olive oil, salt, and pepper.
2. Quarter hoagie roll lengthwise and cut into bite-sized pieces. Add to bowl and toss to coat.
3. Place croutons in single layer on baking sheet. (Reserve bowl for Chicken Caesar Salad recipe.) Broil 3–4 minutes, turning often, to brown evenly. Remove from oven and set aside until ready to toss with salad. Serve.
