Berry Oat Bake

Ingredients
2 medium organic bananas, mashed
1 Publix GreenWise organic egg (or 1/4 cup egg substitute)
2/3 cup Publix GreenWise reduced-fat milk
5 teaspoons maple syrup, divided
2/3 cup Publix GreenWise organic old-fashioned oats
2 teaspoons apple pie spice
1/2 teaspoon baking powder
1/8 teaspoon kosher salt
2 cups fresh organic berries (or frozen)
Cooking spray

Steps
  1. Preheat oven to 350F. In a large bowl, mash bananas with back of wooden spoon (or potato masher). Stir in egg, milk, and 1 teaspoon maple syrup.
  2. In a separate bowl, combine oats, apple pie spice, baking powder, and salt. Combine with banana mixture and fold in berries.
  3. Coat 4 (5-oz) ramekins with cooking spray; place on a baking sheet. Divide banana oat mixture into each ramekin. Bake 30-35 minutes or until toothpick inserted in center comes out clean. Let stand 5 minutes to cool, top each ramekin with 1 teaspoon maple syrup. Serve.
