ABOUT GROUPER

Grouper has a mild flavor and firm texture. It's great for beginning seafood cooks because it remains moist even if it's a touch overcooked. All grouper sold at Publix is a product of the United States and is harvested from the Gulf of Mexico.

Ingredients
1 tablespoon blackening seasoning
1 1/2 lb grouper fillets (3/4 inch thick)
1/4 cup mayonnaise
3 tablespoons ranch dressing
4 hoagie rolls

Steps
  1. Season grouper. Combine mayonnaise and ranch dressing; set aside.
  2. Preheat grill to medium. Grill fish 4-5 minutes on each side or until opaque and separates easily.
  3. Place grouper in rolls; top with mayonnaise mixture and your favorite sandwich toppings.

Other Preparation Methods

Bake: Preheat oven to 400°F. Place 1/ 1/2 lb seasoned grouper (3/4-inch thick) on lightly oiled baking sheet; bake 8-10 minutes or until opaque and separates easily.

Fry: Dip 1 1/2 lb grouper in beaten egg, then coat with bread crumbs; shake off excess. Preheat 3 tablespoons oil (more if needed) in a large sauté pan on medium-high. Cook 3-4 minutes on each side or until crust is golden and flesh is flaky. Season with salt and pepper.
