Broil: Preheat oven to broil. Butterfly chicken, cutting along both sides of the backbone with kitchen shears to remove. Flatten chicken and season with 1/2 teaspoon each salt and pepper. Place on baking sheet breast-side up, cover loosely with foil, and broil 30 minutes. Remove foil and continue to broil 10-15 minutes or until chicken is 165°F and skin is well browned.
