Veal Chops With Wine and Apples

1 tablespoon canola oil
4 (6-oz) veal chops
1/2 teaspoon kosher salt
1/4 teaspoon pepper
1 cup white wine
2 apples, peeled and thinly sliced
2 tablespoons unsalted butter

  1. Preheat oven to 400°F. Preheat oil in large oven-proof sauté pan on medium-high 2-3 minutes. Season veal with salt and pepper.
  2. Add veal to pan; cook 2-3 minutes on each side or until browned. Add wine and apples to veal. Transfer to oven and cook 10-12 minutes, turning once, or until 145°F. Stir butter into sauce until melted.

Other Preparation Methods

Grill: Preheat grill on medium. Grill 4 (6-oz) veal chops, uncovered, 6-7 minutes on each side or until 145°F.

Broil: Preheat broiler. Season 4 (6-oz) veal chops with salt and pepper. Place veal on rack in broiler pan; broil 14-16 minutes, turning once, or until 145°F.
