About Beef Skirt Steak

Skirt steak has a coarse texture and a rich flavor. For the most tender results, always cut across the grain of the meat for serving.

Beef Fajitas

1 1/2 lb beef skirt steak
2 tablespoons fajita seasoning
1 tablespoon canola oil
1 (14-16 oz) package frozen stir-fry peppers and onions
juice of 1 lime
8 flour tortillas

  1. Slice skirt steak across the grain into 1/2-inch-thick slices. Place in medium bowl and season with fajita seasoning. Preheat oil in large sauté pan on medium-high 2-3 minutes.
  2. Add meat to pan; cook and stir 2-3 minutes or until beef has browned. Stir in peppers and onions and cook 2-3 minutes or until pepper mixture is hot. Remove mixture from pan and squeeze lime over top; serve with warm tortillas.

Other Preparation Methods

Grill: Preheat grill. Season 1 1/2 lb skirt steak with 1 teaspoon each: salt, pepper, and mesquite seasoning. Place on grill over direct heat; grill 3-5 minutes on each side or until steak is 145°F.

Broil: Season 1 1/2 lb skirt steak with 1 cup soy sauce and 1 tablespoon Montreal steak seasoning. Preheat oven to broil. Place steak on baking sheet and broil 5-7 minutes on each side or until steak is 145°F.
