Spanish Pork Pot Roast With Spiced-Up Yellow Rice and Fresh Broccoli

Cooking Sequence
- Prepare pot roast through step 4 - 10 minutes
- Allow pot roast to slow cook - 8 to 10 hours
- 30 minutes before serving, prepare rice through step 3 - 25 minutes
- During rice stand time, prepare broccoli; serve - 10 minutes

Spanish Pork Pot Roast
Ingredients
1 (16-ounce) bag small red beans
4 cups water
1 1/2 pounds boneless honey barbecue pork loin
1 (10-ounce) bag frozen seasoning blend (contains diced onions, green/red peppers, celery and parsley)
1 (14-ounce) jar pasta sauce
1 (12-ounce) jar homestyle pork gravy
1 tablespoon cooked, crumbled bacon
1 teaspoon Santa Fe style spice blend
1 envelope Sazón Goya®
salt and pepper, to taste
Steps
1. Preheat slow cooker on high.
2. Rinse beans and check for stones. Place in slow cooker.
3. Stir in remaining ingredients.
4. Reduce heat to low and simmer 8-10 hours. Serve.
Spiced-Up Yellow Rice
Ingredients
2 1/2 cups water
2 tablespoons roasted red peppers
1 tablespoon garlic butter
1 (10-ounce) bag yellow rice
1/2 teaspoon Montreal steak seasoning
Steps
1. Place water in medium saucepan. Cover and bring to boil on high heat for rice.
2. Finely dice red peppers and set aside.
3. Stir butter, rice and steak seasoning into boiling water. Reduce heat to low, cover and allow to simmer 15 minutes.
4. When rice cooking time is complete, remove from heat. Stir in red peppers. Let stand 10 minutes to absorb all liquid from pan. Serve.
Fresh Broccoli
Ingredients
1 1/2 pounds fresh broccoli florets
1/4 teaspoon lemon juice
1 tablespoon garlic butter
1/2 teaspoon seasoned salt
Steps
1. Place florets in colander and wash. Place in microwave-safe bowl.
2. Add lemon juice, butter and seasoned salt.
3. Cover and microwave on high 4 minutes. Stir and serve.
