Pork Tenderloin on the Grill With Savory Greens and Cornbread Pancakes

Cooking Sequence
- Spray and preheat grill; prepare greens through step 3: 10 minutes
- Prepare cornbread batter and start to fry first batch: 10 minutes
- Grill pork, finish frying cornbread, complete greens; serve: 20 minutes

Pork Tenderloin on the Grill
Ingredients
butter-flavored vegetable cooking spray
1 pound pork tenderloin (BBQ flavored)
aluminum foil
Steps
1. Spray grill with cooking spray.
2. Preheat grill for 5-10 minutes on medium-high.
3. Place tenderloin on grill; cook for 3 minutes, then turn. Cover with foil or grill top and heat for 20-22 minutes. Turn every 3-5 minutes. This will prevent burning.
4. Remove from grill. Cut into 1-inch thick medallions by slicing diagonally across the grain. (This is a scaloppini cut.) If additional cooking time needed, return to grill. Continue to cook, turning every 3-5 minutes, until cooked throughout. Serve.
Savory Greens
Ingredients
2 tablespoons butter
1/4 cup frozen onions
1 tablespoon bacon bits
3/4 cup water
1 teaspoon Montreal Steak Seasoning
one 16-ounce bag frozen chopped collard greens
salt and pepper, to taste
Steps
1. Preheat saucepan on medium-high for 2-3 minutes.
2. Add butter, onions and bacon bits to saucepan and sauté for 2 minutes.
3. Add water, Montreal Steak Seasoning and greens; bring to boil. When boiling, cover, reduce heat to low and simmer for 15-20 minutes, stirring occasionally.
4. Remove from heat; salt and pepper to taste. Serve.
Cornbread Pancakes
Ingredients
one 8 1/2-ounce package cornbread mix
1 egg
1 cup reduced fat milk
1/2 cup frozen onion
3/4 cup shredded Cheddar cheese
1 teaspoon salt
1/8 teaspoon white pepper
1/4 teaspoon baking powder
2 tablespoons flour
butter-flavored vegetable cooking spray
Steps
1. Preheat sauté pan on medium-high for 1-2 minutes.
2. In mixing bowl, combine all ingredients, except vegetable cooking spray. Mix well.
3. Spray sauté pan with vegetable cooking spray.
4. Pour batter by 1/4-cup scoops, cooking 3 at one time.
5. Sauté for 4 minutes on each side, or until lightly browned. Repeat until all batter is used.
