Cornflake Pork Chops With Succotash

Cooking Sequence

  • Prepare pork chops and begin to sauté: 15 minutes
  • Prepare vegetables: 10 minutes
  • Toss salad (if serving): 5 minutes

Cornflake Pork Chops With Succotash

Cornflake Pork Chops

2 cups corn flakes
large resealable food storage bag
2 eggs
1 1/2 pounds (4 chops) pork center rib chops
4 tablespoons butter

  1. Put corn flakes in resealable food storage bag and crush.
  2. Scramble eggs in bowl.
  3. Preheat pan on medium-high (1-2 minutes).
  4. Clean and dry pork chops.
  5. Bread pork chops by first dipping in egg mixture, then placing in bag with corn flakes and shaking or pressing in to coat.
  6. Melt butter in pan.
  7. Fry pork chops for 9 minutes per side, turning with tongs. Serve.

1 tablespoons butter
1/2 teaspoon seasoned salt
one 16-ounce bag frozen succotash

  1. Place frozen vegetables in microwave-safe bowl, cover and microwave for 8 minutes, stirring after 4 minutes.
  2. Drain any excess liquid from vegetables.
  3. Cut butter into small squares and place on top of vegetables. Sprinkle with seasoned salt. Stir and serve.
