Coq au Vin (Chicken in Wine), Duchess Potatoes and Honey Glazed Carrots
Meal Time - 1 hour 15 minutes / Serves 4
Cooking Sequence
- Prepare coq au vin and begin to cook: 10 minutes
- Allow chicken to bake: 60 minutes
- When 20 minutes of cooking time remains on chicken, prepare potatoes and carrots: 20 minutes
- Remove chicken from oven and place on platter; complete potatoes; serve: 5 minutes

Coq au Vin (Chicken in Wine)
Ingredients
large resealable food storage bag
1/4 cup all-purpose flour
1 teaspoon seasoned salt
3 1/4 pounds frying chicken (8 pieces)
large oven cooking bag
2 teaspoons roasted garlic
1/4 cup cooked crumbled bacon
1/2 cup frozen diced onions
3 bay leaves
one 12-ounce jar chicken gravy
1 cup Burgundy wine
1 teaspoon browning sauce
Steps
1. Preheat oven to 400°F.
2. Place flour and seasoned salt in resealable storage bag; shake to mix. Add chicken to bag. Wash hands. Shake bag to coat, then set aside.
3. Add garlic, bacon, onions, bay leaves, gravy, Burgundy wine, browning sauce and chicken to oven cooking bag. Tie bag and lay flat in baking dish.
4. Cut six 1/2-inch slits in top of bag and bake for 1 hour. Transfer contents of bag to serving dish. Remove and discard bay leaves. Serve. (Makes 6 servings.)
Duchess Potatoes
Ingredients
one 20-ounce package refrigerated mashed potatoes
1 tablespoon garlic butter
1 tablespoon Parmesan cheese
Steps
1. Place potatoes in microwave-safe cooking dish. Heat on high for 4 minutes.
2. Remove from microwave. Add butter and cheese. Using fork, stir to mix well.
3. Return to microwave and heat on high for 3 minutes. Serve.
Honey Glazed Carrots
Ingredients
1 tablespoon butter
1/2 teaspoon seasoned salt
one 16-ounce bag fresh whole baby carrots
1/4 cup honey
1/4 cup dark brown sugar
Steps
1. Preheat sauté pan on high for 1-2 minutes.
2. Add butter to pan with seasoned salt and swirl to coat.
3. Add carrots. Cook for 5 minutes, stirring frequently.
4. Stir in honey and brown sugar. Mix well. Cook for additional 3 minutes, stirring frequently. Serve.
