Arctic Charr With Orange Hollandaise
1 cup milk 1 (.9-oz) packet Hollandaise sauce mix 4 tablespoons unsalted butter Zest of 1 orange (about 1 teaspoon) 1/2 teaspoon chipotle pepper sauce 1/2 teaspoon kosher salt 2 tablespoons canola oil 2 arctic charr fillets (1-1 1/4 lb), skin removed

Broil: Preheat broiler. Place 2 arctic charr fillets on nonstick foil-lined baking sheet; place pan 6 inches from broiler. Broil 4-5 minutes or until opaque and separates easily. Spread 2 tablespoons prepared basil pesto evenly over top of fish.
