Cheddar Scallion Biscuits

Cooking spray
2 1/2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
2 teaspoons sugar
8 tablespoons butter, cubed
1 1/2 cups Cheddar cheese, grated
1/2 cup sliced green onions
1 cup buttermilk

  1. Preheat oven to 450F. Coat baking sheet with spray.
  2. Whisk flour, baking powder, baking soda, salt, cayenne pepper and sugar until blended. Add butter and combine with fingertips, breaking the butter down to the size of large crumbs.
  3. Stir in cheese and scallions, then make a well in the center. Pour in the buttermilk, and fold in the flour. Do not over stir (it should look slightly crumbly).
  4. Place the dough on a floured work surface. Gently pat dough out until 1-inch-thick; use a biscuit cutter to cut out biscuits.
  5. Place biscuits on baking sheet; bake 10-12 minutes or until golden.
