Tailgate Chicken Sandwich

Ingredients

4 Bakery French Hamburger Rolls
1/4 cup Caesar salad dressing
2 teaspoons Italian seasoning
1 teaspoon Montreal steak seasoning
large zip-top bag
2 (8-ounce) frozen boneless, skinless chicken breasts, thawed
1/4 cup traditional pasta sauce
1/4 cup mild pepper rings
1/2 cup shredded Italian cheese blend



Steps

1. Preheat grill. Slice rolls in half and set aside. Combine dressing, Italian seasoning and steak seasoning in zip-top bag.
2. Cut chicken in half across grain (this is a medallion cut) and add to bag. Wash hands. Knead bag to coat chicken. Using tongs, place chicken on grill, cover and cook 2-4 minutes on each side (170ºF). (Grilling times will vary depending on the thickness of the meat.)
3. Top each chicken breast with 1 tablespoon each pasta sauce and pepper rings; cover and cook 1-2 minutes until heated. Assemble sandwiches by placing cheese on bottom half of rolls and then adding hot chicken. Top with remaining half of rolls and serve.

Note: Omit rolls to make a great center-of-the-plate entrée.

Caesar Salad Americana

Ingredients
1 (12-ounce) bag American salad blend
1 cup grape tomatoes
1/2 cup shredded Italian cheese blend
1/2 cup seasoned mini croutons
1/2 cup Caesar salad dressing

Steps

1. Place salad blend, (rinsed) tomatoes, cheese and croutons in salad bowl.
2. Toss with dressing and serve.
