Pacific Halibut has an extremely mild flavor and very firm texture. Halibut is very lean and tends to dry out quickly, so it should be watched closely while cooking.

Grilled Sesame Halibut

Ingredients
1 1/2 tablespoons sesame oil
1/3 cup low-fat mayonnaise
1 1/2 lb halibut fillets (3/4-inch-thick)
1 tablespoon canola oil
1/2 teaspoon kosher salt
1/4 teaspoon pepper
2 tablespoons green onions, thinly sliced

Steps
  1. Preheat grill to medium. Combine sesame oil and mayonnaise; set aside. Brush fish with canola oil; season with salt and pepper. Grill fish 3-4 minutes on each side or until opaque and separates easily.
  2. Spread sesame sauce over fish; top with green onions.

Other Preparation Methods

Sauté: Preheat large sauté pan on medium-high. Season 1 1/2 lb halibut (3/4-inch-thick) with salt and pepper. Place 1 tablespoon oil in pan, then add fish; cook 3-4 minutes on each side or until opaque and separates easily. Add 10 oz lemon dill finishing sauce to fish, heat until warm.

Broil: Preheat oven to broil. Brush 1 1/2 lb halibut lightly with olive oil, season with 1 tablespoon herb seasoning. Coat baking sheet with cooking spray. Place fish on pan; broil 4-5 minutes or until opaque and separates easily.
