Garlic-Herb Rubbed Rib Roast
4 lb boneless rib roast
1 teaspoon kosher salt
1/2 teaspoon pepper
1 tablespoon garlic, minced
1 tablespoon herbs de Provence

Bake: Preheat oven to 325°F. Season a 4 lb standing rib roast with salt and pepper on all sides. Place in a roasting pan and bake 1 1/2 hours. Rub rib roast with Dijon mustard and top with bread crumbs. Bake 45-60 minutes or until roast is 145°F (medium-rare) up to 170°F (well-done). Transfer roast to cutting board; let stand 10-15 minutes before slicing.
