About Cucumbers

Cucumbers should be very firm, with no bruises or soft areas, and deep green in color. As they ripen, their skin turns yellow and flavor becomes bitter. Their mild, watery flavor is similar to a tart melon.

Cucumber & Ham Salad

2 cucumbers, peeled
1/2 medium sweet onion
1 (8-oz) package diced ham chunks
3/4 cup Italian vinaigrette dressing

  1. Thinly slice cucumbers and onions; place in medium bowl. Stir in ham chunks and dressing until well blended.
  2. Chill 25 minutes for flavors to develop. Stir well.

Other Preparation Methods

Bake: Preheat oven to 400F. Cut cucumbers in half lengthwise and scoop out the seeds. Cut the cucumber in 3 sections and top with matchstick carrots, seasoning, and feta cheese. Bake 15-20 minutes or until softened.
