Cucumber & Ham Salad
2 cucumbers, peeled
1/2 medium sweet onion
1 (8-oz) package diced ham chunks
3/4 cup Italian vinaigrette dressing

Bake: Preheat oven to 400°F. Cut cucumbers in half lengthwise and scoop out the seeds. Cut the cucumber in 3 sections and top with matchstick carrots, seasoning, and feta cheese. Bake 15-20 minutes or until softened.
