Apples are at their peak of flavor in October. With sweet-tart Honeycrisp; sweet and crisp Fuji, Red Delicious, and Gala; and tart Granny Smith, perfect for pies, there's a variety to meet everyone's tastes.

2 prepared pie crusts
2 medium apples, peeled/cored, finely chopped
1/2 cup sugar
3 tablespoons cornstarch
2 tablespoons fresh orange juice
1 teaspoon fresh orange zest
1/8 teaspoon ground cloves (or cinnamon)
1 cup whipped topping (optional)

  1. Preheat oven to 350F. Lightly coat 8 cups of muffin pan with cooking spray. Roll out pie crusts; cut four (4-inch) circles out of each crust and place in muffin pan cups.
  2. Combine apples, sugar, cornstarch, juice, zest, and cloves. Divide apple mixture into each crust. Bake 30-35 minutes or until apples are soft and crust is golden. Let stand to cool. Serve with whipped topping.
