Crunchy Cereal Chicken Tenders with Orange Fruity Slaw

Crunchy Cereal Chicken Tenders

Ingredients
1 egg (or 1/4 cup egg substitute)
1/4 cup water
2 cups crunchy sweetened corn and oat cereal
1 1/2 cups cornflakes cereal
1/4 cup all-purpose flour
1/2 tsp onion powder
1/2 tsp garlic powder
1/4 tsp pepper
1 1/4 lb chicken breast tenders
1/4 cup canola oil
Honey mustard sauce (optional)

Steps
  1. Whisk egg and water in shallow bowl until blended. Process cereal and cornflakes in food processor until coarsely chopped; transfer mixture to second shallow bowl.
  2. Place flour, onion powder, garlic powder, and pepper in bag, then shake to coat. Add chicken (wash hands); seal bag and shake to coat.
  3. Place oil in large sauté pan and preheat on medium-high 2–3 minutes. Remove chicken from bag and shake off any extra flour. Dip chicken in egg mixture (allowing excess to drip off), then dip into cereal mixture. Place chicken in pan; cook 3–5 minutes on each side or until chicken is 165°F. Serve with sauce for dipping.

Orange Fruity Slaw

Ingredients
3 cups shredded coleslaw mix
1 cup grapes, halved
1 medium apple, coarsely chopped
1/2 cup celery, finely chopped
1 can mandarin oranges (11-oz), drained
1 container orange-flavored low-fat yogurt (6-oz)
1/4 cup slivered almonds, (optional)

Steps
  1. Halve grapes and chop apple and celery; place in salad bowl. Stir in coleslaw mix and oranges.
  2. Stir in yogurt until blended. Cover and chill 10 minutes or until ready to serve. Sprinkle with almonds, if desired, and serve.
