Chicken Florentine Bake With Spinach and Blue Cheese Bread

Cooking Sequence

  • Preheat oven, prepare Florentine bake - 10 minutes
  • Prepare bread and begin to bake; complete both and serve - 45 minutes

Chicken Florentine Bake

8 oz cream cheese
1 cup frozen creamed spinach
2 cups Deli rotisserie chicken, chopped
8 oz Deli fresh mozzarella cheese, divided
1 1/2 cups whole milk
1 large egg (or 1/4 cup egg substitute)
1 (4-oz) jar diced pimientos, drained
1 teaspoon dried Italian seasoning
1/3 cup julienne-cut sun-dried tomatoes
1 cup quartered artichoke hearts, drained
1 cup fresh pre-sliced mushrooms
16 oz gnocchi pasta

  • Preheat oven to 400°F.
  • Cut cream cheese into small pieces and place in large bowl to soften.
  • Microwave spinach on HIGH 2–3 minutes to thaw.
  • Remove chicken (breast only) from bones; cut into bite-size pieces.
  • Cut mozzarella cheese into small bite-size pieces.
  1. Stir into cream cheese: spinach, milk, egg, pimientos, Italian seasoning, and 1 cup of the cheese. Stir in chicken, tomatoes, artichokes, mushrooms, and gnocchi.
  2. Transfer mixture to a 9- x 13-inch baking dish and cover with foil; bake 25–30 minutes.
  3. Uncover and top with remaining 1 cup cheese. Bake 8–10 more minutes or until bubbly (165°F) and cheese melts. Let stand 2–3 minutes before serving. Serve.

Spinach and Blue Cheese Bread

Cooking spray
1/3 cup frozen creamed spinach
1 (11-oz) can crusty French loaf dough
1/2 cup Deli crumbled blue cheese

  • Preheat oven to 400°F. Coat baking sheet with cooking spray
  • Microwave spinach on HIGH 2–3 minutes to thaw.
  1. Cut dough three-fourths through, lengthwise, leaving one-fourth uncut. Spread spinach and cheese evenly down center of dough; seal by pinching edges together.
  2. Place loaf, seam side down, on baking sheet. Bake 20–25 minutes or until golden. Let stand 5 minutes before slicing. Serve.
