Hearty Beef and Vegetable Soup
Ingredients
2 tablespoons unsalted butter
5 ounces pre-sliced onions (1 1/4 cups)
1 cup pre-diced celery
1 cup crinkle-cut carrots
1 tablespoon minced garlic
1 cup pre-sliced mushrooms (rinsed)
10 ounces pre-sliced squash/zucchini (2 1/2 cups)
1 (32-ounce) box reduced-sodium beef broth
1 (20-ounce) package refrigerated diced potatoes with onions
1/2 fully cooked beef tips with gravy (17–24 oz package)
1 cup tomato sauce
1/2–1 teaspoon red pepper flakes (adjust to taste)
1/2 teaspoon dried rosemary
Steps
1. Preheat large saucepan on medium-high 2–3 minutes. Place butter in pan; swirl to coat.
2. Add onions, celery, carrots, and garlic; cook 2–3 minutes, stirring often, or until onions begin to soften. Stir in mushrooms, squash, and zucchini. Cook 1–2 more minutes or until heated.
3. Stir in remaining ingredients (using one-half of the package of beef tips and gravy). Reduce heat to medium-low; cover and cook 10–15 minutes or until vegetables are soft and beef is thoroughly heated. Serve. (Makes 6 servings.)

Cheddar Beef Wraps
Ingredients
1 tablespoon unsalted butter
5 ounces pre-sliced onions (1 1/4 cups)
1 cup pre-sliced mushrooms (rinsed)
1/2 fully cooked beef tips with gravy (17–24 oz package)
1 cup shredded Cheddar cheese with chipotle peppers, divided
4 Deli multigrain flatbread wraps
Steps
1. Preheat large sauté pan on medium-high 2–3 minutes. Place butter in pan; swirl to coat. Add onions and mushrooms; cook 2–3 minutes, stirring occasionally, or until vegetables begin to soften. Preheat 2-sided tabletop grill.
2. Stir in one-half of the package of beef tips and gravy; cook 5–6 minutes, stirring occasionally to break up meat, or until heated.
3. Place 1/4 cup of the cheese on one end of each wrap; divide beef mixture over top of cheese. Roll wrap around filling and place on grill, seam side down. Close lid and grill 2–3 minutes or until toasted and cheese melts. Serve.
