Double Lemon Cake

Double Lemon Cake

cooking spray
1 box lemon cake mix (15.25-16.5-oz)
3 large eggs (or 3/4 cup egg substitute)
1/3 cup vegetable oil
1 cup water
3/4 cup lemon curd
1 (12-oz) container vanilla frosting
1 lemon, sliced


  1. Preheat oven to 350°F. Coat three 8-inch round cake pans with cooking spray. Prepare cake mix following package instructions using eggs, vegetable oil, and water.
  2. Divide batter evenly between the three pans. Bake 15-18 minutes or until toothpick inserted in center comes out clean. Allow to cool on rack 15 minutes.
  3. Microwave lemon curd on HIGH for 30-40 seconds or until spreadable, stir thoroughly. Invert one layer of cake onto a cake plate or stand. Spread half the frosting on cake; leaving 1-inch border on outer edge. Invert second layer; spread with lemon curd, leaving 1-inch border.
  4. Top with third layer; spread with remaining half of frosting on top of layer, leaving 1 inch border. Slice lemon thinly, garnish cake. Serve.
