Chipotle-Mango Pork with Pasta

Ingredients

  • 1 ½ cups water
  • ½ cup reduced-fat milk
  • 2 tablespoons canola oil, divided
  • 1 (4.3-oz) pouch chipotle pasta side dish mix
  • 1 pork tenderloin (about 1 lb)
  • ½ teaspoon kosher salt
  • ½ cup fresh mango peach salsa, well drained
  • 2 tablespoons fresh cilantro, finely chopped
  • ⅓ cup light mayonnaise
  • 2 teaspoons chipotle pepper sauce
  • 2 cups fresh baby spinach
  • ¼ cup cooked bacon pieces
  • ¼ cup julienne-cut, sun-dried tomatoes in oil, drained

Steps

    1. Place water, milk, and 1 tablespoon oil in large saucepan and bring to a boil. Stir in pasta mix; cook 10–12 minutes, stirring occasionally, or until pasta is tender.
    2. Preheat large sauté pan on medium-high 2–3 minutes. Cut pork in half lengthwise, then cut each piece in half; season with salt (wash hands). Place remaining 1 tablespoon oil in pan, then add pork; cook 4–6 minutes, turning occasionally, or until browned. Meanwhile, drain salsa and chop cilantro; combine both with mayonnaise and pepper sauce.
    3. Reduce heat on pork to low. Stir sauce into pork; cook 2–3 minutes or until pork is 145°F and sauce has thickened.
    4. Stir spinach, bacon, and tomatoes into pasta. Slice pork; serve with sauce and pasta.
